India is looked up to be the largest producer of milk, and is now gearing itself to become the largest food factory in the world. The Indian dairy sector is expected to triple its production in the next 10 years, in view of creating opportunities for export to Europe and the West. The main aim of the Indian dairy industry is to better manage national resources, and also to enhance milk production and upgrade milk processing, using innovative technologies and better solutions. The dairy industry is involved in processing raw milk into products such as consumer milk, butter, cheese, yogurt, condensed milk, dried milk (milk powder), and ice cream, using processes such as chilling, pasteurization, and homogenization. The country now produces around 100 million MT. value of output, which amounts to Rs. 1179 billion.
